There are easier ways to run a food cart.
We could buy bottled sauces, frozen fillings, and pre-made mixes. We’d save time, wash fewer dishes, and probably sleep a little more.
Instead, we make almost everything ourselves.
We mix our crêpe batters from scratch. We slowly caramelize our onions. We cook our own vanilla bean custard, lemon curd, salted caramel, whipped cream, blackberry coulis, fig-onion jam, shrub syrups, and seasonal specials.
Even our drinks and breads are made in-house because we like knowing exactly what goes into the food we serve.
It’s slower. It’s messier. It’s worth it.
Because when someone takes that first bite and says, “Wait… this is gluten-free?” we know all those extra pots and pans earned their keep.
